Pulmones

Yesterday we walked up to our favorite carnitas place to score some lunch. We pointed out a few choice, crispy pieces we thought looked particularly fine. The proprietor gave us a quizzical look, started to say something, then changed his mind. Instead, he breathed in and out several times in an exaggerated way and pointed to the meat in question. "Ahhhhhh," we said in unison... "lungs." When we didn't immediately recoil in disgust, he offered us a taste. What can I say? It was damned tasty (muy sabroso). So we ordered a slab along with some lean rib and fatty belly meats. When we chopped it all up and stuffed it into fresh corn tortillas with a little onion, cilantro and sala verde.... Yum!
